M39 GT-HD

The La Cimbali M39 GT-HD is the new frontier of conventional espresso machines.  It has the most stable brew temperatures and the most flexible pressure profile control settings of any multi boiler espresso machine available on the market.  With its reliable microprocessor and renowned user friendly interface, this WBC certified machine allows for a level of control and consistency that is unmatched in modern espresso technology. 

The M39 GT- HD employs sequential heat exchangers and a final PID controlled stabilization chamber to give you the most stable brew temperature possible on every shot.  The process begins in the first heat exchanger where cold incoming water is heated and then transferred to the second heat exchanger to be stabilized. The mixing valve then cools the outgoing/incoming water to + or -190 degrees (depending on your coffee profile) before entering the final stabilization chamber. With no variation in incoming water temperature, the final PID controlled boiler/stabilization chamber on each group allows for easy control over your ideal brew conditions.

The M39 HD also allows you to set custom pressure profiles that use multiple pressure settings that range from 0-12 bars.  Each delivery button has its own pressure profile and uses a proportional valve that allows each group to run a variety of settings simultaneously without interfering with the extraction process.  For example, button 1 can be set to 3 bars for 5 seconds, then 12 bars for 2 seconds, then 9 bars for 15 seconds, and then it can finish the extraction at 5 bars.  This latest innovation gives you the flexibility to invent unique pressure combinations that ensure maximum quality and distinctiveness in every shot you brew.

To top it all off, the M39 GT-HD has removed unpredictable variables in the espresso extraction process with it’s + or - .5 degree brew stability and digitally controlled pressure profiling.  This machine, by facilitating unmatched control customization, and consistency in every phase of the extraction process, truly represents the next step of innovation in customizing your espresso.
